Got any really good Kai Moana recipes to share??

Here is one I stole of Flipper and modified to suit.

Mussels
Pesto
Olive oil
Garlic
Feta cheese

Boil up mussels until they open. Remove from shell and drain any liquid off of them. Mix up pesto , olive oil and garlic up in desired quantitys and add to mussels.
Lay the mussels out on a baking dish and sprinkle with grated feta.
Bake/ grill until the cheese bubbles and starts turning brown.

Best served with a cold beer.

This recipe is very very good!

Grilled Scallops with pumpkinseed, chilli and coriander sauce

50g pumpkin seeds
1 hot green chilli, chopped
large handful (about 25g) coriander leaves
2 garlic cloves, peeled
150 ml sunflower oil
juice of 1 lime
2 shallots, chopped
10g +/- parmesan cheese, freshly grated
32 scollies
25g butter, melted
salt and pepper

1. For the sauce, blend the pumpkin seeds, chilli, coriander, garlic, oil, lime juice, shallots, parmesan and 1/2 tsp of salt into a smooth paste in a food processor.

2. Preheat the grill to high. Put the scallops on a baking tray, brush each generously with melted butter and season with salt and pepper. Grill scallops for 1-2 minutes depending on preference

3.Lightly spread about 1tsp of the sauce over the scallops. Grill for another 1 to 2 minutes until they are just cooked through and the sauce has just started to colour.

Best eaten accompanied with a suitable ale....

Does anyone have recipes for cooking kina other than in a pie.

Have done and did enjoy it. The wife won't though and i'll have to cook it somehow.
